"Poorly designed product" 2010-08-29

The first time when I held the pan, I immediately felt uncomfortable (if I don't use the word painful) because the two sides of the handler is not smooth due to poor design. The situation becomes worse when the pan contains food. The size of the pan is 11.2 inches, not 12 inches, which matters because a standard 12-in lid does not match the pan. I don't understand how can such a design fault not been caught by the manufacturer and the size is not what it claims.

This pan is not quite as heavy as I like, but it works very well in the kitchen. It distributes heat well, the non-stick surface is sturdy (for such coatings--it still wears out), and the rounded inner surface (with no rivets) makes it very convenient to move the food. While many good pans have very sturdy handle attachments using rivets, the rivets make the food catch or stick--this pan avoids this problem.

My wife has been very happy with this pan since we purchased it about a month ago. The pan is well made and has a nice steel bottom that is heavy duty (unlike some other pans that are the same thickness at the top and bottom). My wife has been making some great omelets and it is the perfect size for that. I would recommend this pan, but can't comment on the longevity of it yet.

This frying pan replaced my old, chipped, rusting out(embarassed to say that, but you don't know me, anyway)and it even frys food but mostly it looks great. What can you say about a frying pan? I wouldn't have even given this reponse if I hadn't had a few glasses of wine. Seriously, it is a quality pan - without paying a fortune. "Tired of non-stick pans." 2010-03-27

Once tempered properly you can cook anything on this, with any utensil, without fear of ruining the surface. Having spent a fortune over the years on non-stick pans I decided to go back to what my mom and grandma cooked with. I've long since discovered the best way to destroy a non-stick pan is to get it really hot: which is how I like to color vegetables and meats. This pan is indestructible even with metal utensils (which I prefer). You can't put it in the dishwasher but you really shouldn't do that with non-stick either (read the fine print and most non-sticks should be hand washed). You should use a little fat each time (the same as non-sticks). If anything sticks, just let it set a little while, and the tempered surface will release it. This is the big change in using steel pans: ingredients stick and then release. Be patient and you'll get the hang of it. Beware though: this pan is very heavy. It is so heavy that my wife is hesitant to use it. I don't blame her but I put up with it. I'm sure a grandkid will inherit this pan: it's that durable.

Bought this skillet on an impulse buy while on vacation in Boulder CO, not thinking what a hassle it would be to pack for the plane. Got it home and made paiella and it worked great. Even heat over two gas burners. Just a light crustiness to the rice. Very impressed. Next night I used it for stir fry. This worked great as well. I don't know how I made do all these years without a 14" skillet. And such a bargain! This big pan cost less than Cusinart's smaller pans and it does so much more.

if your tired of not having enough room in the skillet, this is for you .... if you need a lid ..... a) the glass lid to the 14" cuisinart stir-fry works ok and you can see thru it ... it does no fit perfectly and it sits a little low, but it works fine if the skillet is not piled too high .... or b) get a 16" aluminum pizza pan ... to bad they dont make a glass lid to come with it that is a perfect fit ... i am so tired of wondering where all those MISSING pieces of "tefflon" went that i use nothing but stainless now .... and it does take a little more effort to keep it clean if you want to try and keep it looking like new ... but if you just want it CLEAN .... soak it 20 minutes, then wash it out ... you can even put it in the dishwasher without worrying about scratching the tefflon ...

I purchased the 10 inch open skillet, 6 - quart sauce pot, 12 inch every day pan, and 3 quart chef's pan from the Cuisinart Chef's Classic Stainless line. I believe that these are about all the pans you really need for a typical kitchen, along with perhaps a smaller pot and a small non-stick pan for eggs. I have been using these pots and pans for a few months, and I am enjoying using them. Not to mention that you can't beat the price for this kind of quality cookware. I feel that these pans will last for a very long time.

This is a VERY large pan. That being said, I have found it to be a great time saver for me. I can make up to five small pancakes in it, or finish things like sauces and potatoes very quickly to name a few recent things that have been in the pan. If there is any stuck on food say from something like potatoes with onions and garlic, I just soak it on low for a few minutes and it cleans up very nicely. In fact I seem to need very little oil for cooking things that might normally stick. When heated I can turn the pan down to medium and it holds the heat very nicely. I'm very pleased with my purchase from Warehouse Deals on Amazon.

This is olne of the best frying pans I have ever used, Cooks food evenly, heats fast, and cleans like a dream. I have seared meats in it and the stuck on residue comes off easily with minimum scrubbing.
I have Two complaints:
The handle constantly needs tightening.
The knob in the middle of the glass lid is mounted on a metal ring. This ring gets very hot, and, when lifting lid, fingers can get burned by this ring, as I found out the hard way.

A perfectly good steel pan at the price except the handle broke while cooking. Amazon replaced it but then sent conflicting messages. The first said throw the old one out, your replacement is free. OK, done. Then I started getting messages to return the old one or I would be charged for two pans. My emails to Amazon were not answered. Finally I found a number for a real human who apparently saw the contradictory emails and let me off the hook. A lot of hassle from Amazon for nothing.

"The handle easily got loose!" 2010-02-01

I purchased this item last Nov. 6 2009. And yesterday was Jan. 30, 2010. The handle got loose now. I dont know how to tighten it. It easily gets clean and neat after I wash with soap and put a little bit of Crema Brite on it to make it shiny and flawless. I think that is the only disadavantage, the handle! Overall, I am not really very satisfied. I wish I can return it for free but I have to pay for the shipping and so so. I dont like to spend another dime for returning it.

"Best pan I've ever owned" 2010-06-15

I've been using this pan for seven years. I confess, I originally bought it because I was sick of my Hamburger Helper boiling over all the time. But as I've become a better cook, I've come to appreciate how great this pan really is. It takes longer to heat up (maybe 10-15 minutes) because it's so thick on the bottom and because you can only put the heat up to medium. But it gets burning hot even on that lower heat, and it's evenly hot, even on my electric range. It's hard to burn anything in this pan--you have to actually forget that you had something on the stove. (Not that I've done that, ha ha.) This was my first pan that wasn't a non-stick, and I was worried about clean-up, but clean-up is easy--I've never needed to use anything but a kitchen sponge to get it perfectly clean. The paper that came with it said you could put it in the dishwasher, but I don't--it's too big. I use it to sear steaks, cook stews, make chicken tiki marsala, fajitas, etc. As I've become a better cook, I haven't needed anything but this same pan. About once a year I need to tighten the screw on the handle, but I've had no other problems with it whatsoever.

Skillet is large and great for marina sauce or gravy, which require frequent stirring. Handles a whole small chicken for frying. Sticks badly for chicken-fried steak, noodle dishes, and alfredo sauce, even when pre-coating with canola or olive oil. Overall does the job for large one-dish meals.

I have my original set of Farberware Classic pots & pans when I got married 36 yrs. ago. It did not include the 12" fry pan which I wanted. It's a sturdy pan and cleans up easily. The BEST feature is the helper handle. This handle makes taking the pan from cooktop to table sooooo much easier, since a large pan as this can get very heavy when filled.

Large pans like this one need to be on large burners to keep their balance. They heat very evenly (no hot spot) they keep warm even after off the burner, so carryover cooking must be kept in mind, giving you the chance to finish other dishes while the one on this pan keep cooking in the pan alone. Excellent product, I own other pans by Gordon and they are all excellent. I cook pretty much every day. Clean them right after use and they will last for ever. Very comfortable to sue handles. The best thing about them when it comes to money is that they are a high quality product for half the price of All-Clad brand, and they are built in the same way (high quality alluminum sandwiched between 18/10 stainless steel)

This is the first non-stainless steel frying pan that I have purchased. I was tired of the material flaking off the stainless steel pans, so I hopefully gave this one a try. It cooks very evenly and works well. It is easy to clean, too. The food doesn't quite slide off as easily as it does on stainless steel, but hard scrubbing wasn't required, either. I plan to get more pans like this.

The screen seems to do a good job at reducing the grease splatter, but the rim prevents the screen from sitting down on the pan. I have Calaphalon pans with handles that are wide where they attach to the pan. The opening in the rim of the screen doesn't fit well over the handle. Save your money and buy the one without the rim.

This is a great egg poacher at a great price, attractive design, cooks well, the major flaw is the small black plastic knobs on each poacher cup. While they are easy to pick up, they are too dang hot to hold for more than a second, making it quite inconvenient to try to spoon the egg out of the cups; you have to awkwardly use a pair of tongs, a pot mitt, or your napkin. The design of a slit in the handle of the cup allowing it to be held by a fork or knife (which many models employ) is a far better alternative... what would have been really innovative would have been to have these knobs detachable by an easy clip with a simple, quick, squeeze motion, so they are not heated in the bath during the cooking process (hey, if any company utilizes this idea, I want a % of royalties for this idea)... it seems the permanent platic knobs were designed by someone who never tested or used the product or they would have discovered this flaw. I give it 3.5 stars since a well cooked poached egg does little good if you cannot get it onto your plate without dropping it or burning your fingers (looking even sillier if you are serving guests breakfast--in which everyone present clearly sees the fatal flaw in the design and wonders why the heck the "professionals" who designed it could not understand the obvious).

Do you really need a poacher at all? I ask this because the old fashioned way of poaching eggs in a saucepan of simmering water is 1) Dead easy; 2) Produces a lot less washing up; 3) Most important of all: the result tastes better!
Any decent cookbook will tell you how, but here are the basics:
* Bring approximately three inches of water plus a splash of white wine vinegar to a simmer in a largish saucepan
* Carefully break an egg (preferably at room temperature) into a cup
* Gently tip it into the simmering water
* After 2½ minutes carefully remove it with a slotted spoon, gently shaking off surplus water.
Actually, this is a lot simpler to do than it is to describe. I have now poached dozens of eggs this way and never had a failure. Again, they taste better - the whites in particular are much lighter and do not have the rubbery consistency of eggs done in a poacher. I discovered all this after spending $48 on a poacher. Why don't you give poaching the old-fashioned way a try first?

Bought lots of "stuff" online - some good, some bad. This poacher was not good. IT IS GREAT! 75 yrs old and a 2 fried eggs with bacon for breakfast person for most of those years. In consideration of my MD's request, got rid of the bacon and switched to soft boiled eggs. I got so sick and tired of handeling hot eggs, I started poaching them in a frying pan. What a cleanup mess. Last week I received this poacher. Now get this. DISREGARD ANY NEGATIVE COMMENTS concerning it. It is great. Spray the cups with Pam and cleanup is virtually nil. Quick tip I stumbeled on. I slightly over fill the water in the frying (only slightly) and cook at a pretty high boil. A small amount of boiling water will work its way into the egg cups. Viola! Tops of egg cooked perfectly. Tilt the cup slightly as you remove it and the water drains into the frying pan. Eggs slide right out into your "egg cup". Never poasted before but this product is really good!

"You have to know what you're doing" 2010-07-21

I own the 10-piece Pro-Clad set, and the 12-inch pan. It took me a couple of weeks to learn how to use these pans. At first, everything was sticking, and cleanup was a hassle. But, I didn't give up, and read up on how to properly cook with stainless steel pans. When the directions tell you to cook at a lower temperature, pay attention! that turns out to be the key - properly managing the temperature. It turned out that even though I *thought* I was cooking at a lower temp, I really needed to drop the temp even more; about 20-30% lower than I was using for my older anodized aluminum non-stick cookware. Once I figured that out, I've had no problems. I cook fried eggs, scrambled eggs and even omelettes in these pans, using nothing more than some cook spray. When used correctly, these pans are very easy to clean up, too. Most of the time, a wash cloth or dish sponge is all I need. Sometimes, I need to break out the Bar Keepers Friend Cookware Cleaner. After a few months, these pans still shine. Other positives, they heat evenly, and react quickly to changes in heat (I have a gas stove).

I just purchased the 8 inch version of the Emeril Pro-Clad pan, and it has me thinking that it actually is using aluminum as the surface of the pan, with stainless for the handle and exterior sides of the pan. The texture of the interior cooking surface of the pan is not smooth as it is in Revere Ware, but rough like the bottom of the pan, which I assume is aluminum. This makes for an attractive pan, but an extremely problematic cooking surface. Everything seems to stick to it, and it is a royal pain to clean. I never have the same degree of sticking problems with my old venerable Revere Ware. And the major reason I buy stainless steel cookware is for the widely-reported non-toxity of the surface. The safety of cooking with an aluminum surface has been called into question may times. And teflon has been proven to scrape off and end up in our digestive tracts - possibly contributing as a carcinogen. Why should one take such chances, when stainless is widely available and in a similar price range? The designers of this line appear to have produced an attractive, but troublesome set. I have never seen stainless steel with a matte surface, as is the case with this pan, but, even if it IS stainless on the cooking surface, why would they create such a design knowing that food was going to stick to it much more than a shiny stainless surface? I won't be buying any more of these pans.

Unless you have a sponsored cooking show and get All-Clad cookware for free, there is hardly any reason to pay the higher price for one with stuff like Emeril's Pro-Clad, or Cuisinart's Multi-Clad Pro line around. For the amateur cooking enthusiast, this thing will do everything the regular All-Clad will do. This pan cooks and cleans well, giving a great sear to meat and veggies on lower heat settings. The handle is way more comfortable than the All-Clad, which is strange since All-Clad makes the Emeril Pro-Clad - you'd think the more expensive, original "better" pan would have the better handle, but that's just a part of what makes this such a joy to buy, especially when I nabbed it off Amazon at half price (making it a hundred dollars less than the All-Clad version at the time). I have non-stick, I have cast iron, and now I have tri-ply stainless steel. They all have their uses. My neighbor and friend insisted on the All-Clad, and he has an enviable collection, but short of the nominal bragging rights, my food comes out just as good in my pro-clad; whatever the real or perceived differences between the two.

This is not a negative review, just some observations. Pan arrived today, well packed in emerilware's original box. Since this is basically an aluminum pan clad with stainless top & bottom, I tried the magnet test. My small telescoping magnet sticks to the bottom as if it were a cast iron pan, leading me to wonder what kind of 'aluminum' is inside. I wouldn't think a skin of stainless steel on the bottom would produce such ferric attraction. So I went to emerilware's webside to ascertain the composition. Well I found no specific info and no 'contact us' link, anywhere. Then googled their contact info and came up with a phone number, 800-255-2523. Turns out they're closed today, President's Day. Then called Amazon, immediately received an agent and told her the issue. I'll call emerilware tomorrow and see what I can find out. Seems as if emerilware is not really connected with the producer of this pan. Was told by Emerilware rep that stainless bottom is enhanced to improve induction heating. I would add more stars to review but can't.
